Healthy Carrot Cake Banana Bread

Ingredients for 10 slices, 167 Kcal per slice

  • 250 g carrots
  • 4 dates
  • 2 eggs
  • 1 banana
  • 60 ml low fat (vanilla) yoghurt
  • 100 g whole wheat flour (or 250 g instead of rye flour and banana flour)
  • 90 g whole meal rye flour
  • 65 g banana flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp pumpkin spice
  • 1 tsp vanilla powder
  • 30 g oats
  • 35 g raisins
  • 25 g walnuts


Preheat the oven to 180C °. Line a rectangular cake tin with baking paper. Put the carrot in a food processor or blender and chop into small pieces. Add the dates, eggs, banana and yogurt and mix until it is nice and frothy. Meanwhile, in another bowl add the wheat flour, rye flour and banana flour (or only wheat flour if not using other flours), baking powder, baking soda, pumpkin spice and vanilla powder and stir in the oats and raisins. Chop the walnuts and stir them too. Now add the contents of both bowls together and stir well. Pour into the baking tin and put in the oven for 35 minutes, or until it is cooked (insert a toothpick and when it comes out clean (without dough) it’s done). Let it cool down before you enjoy it!
